    It’s basically a fairly labor intensive and long way to make soft boiled eggs: alternate them between two temperature controlled baths of 100c and 30c. At home this means you’ll struggle to keep the 30c bath cool enough adding the hot eggs to it without a laboratory immersion chiller but it can be done. Also the timing from the study may need to be adjusted based on egg size.

    However:

    “Di Maio says he now boils all his eggs this way, and his friends and family thank him for it: “Of course, it takes time. But I think it’s good to dedicate some time for the people you love.”

    I ask Di Lorenzo[principle author] if she feels the same way. She pauses, and looks a little sheepish: “I don’t really like eggs,” she says.”
